Lots of layers and fluffy, buttery icing are good, but at heart, I’m a coffee cake kind of girl.
It’s more of an everyday kind of cake, not that I need cake every single day, but every now and then I get an urge for something sweet. I’m not much of an pre-packaged kind of sweets girl. Well, unless we’re talking chocolate. I’ll eat chocolate wrapped in just about anything, but when it comes to cookies or cakes, I generally don’t buy them in the store.
I bake them.
It’s amazing how cooking dinner can feel like I’ve been thrown in a work camp and made to do grueling physical labor, but baking a cake is actually kinda fun.
I think there’s some sort of malfunction in my brain.
This cake has cinnamon and sugar baked into the top, but I can imagine leaving off the cinnamon and sugar and piling on fresh strawberries dripping in juice.
This cake took me about 5 minutes to put together and bake time is only 20 minutes. It’s an easy, dense cake that stays fresh for a few days.

I’m not one for making things that are really and truly homemade and require flour and sugar and all that jazz… but this looks amazing! =) I might have to try making one of these!

I make coffee cake quite a bit–for Sunday morning breakfast. I love it! It is moist, and it does keep, but around here it doesn’t last long enough to test how long it keeps.
Some of my older relatives were MASTERS at this recipe….or one very mutch like it. YUM!
You can bake one for me on my next visit!
