After a few days of less than desirable dinners, I really tried to cook it up for my family. I made meatloaf with mashed potatoes and gravy and green beans. Then I thought I’d blow all their minds and bake a cake, but my daughter asked if we could make pumpkin cookies instead.
Now, you know I’m a big fan of the two-step cake – pumpkin and cake mix, but I had no idea if we could turn this into a cookie. I was feeling bold though. My last kitchen fire was days behind me, so why not.
“Let’s bake cookies!” I said.
Pumpkin Spice Cookie Recipe
Two Ingredients – Two Steps
1 spice cake mix
1 small can pumpkin
Mix & Bake
Mix those two ingredients in a bowl, set your oven to 350 degrees and then spoon batter onto your cookie sheet. We have a small scoop, like a melon baller, we use. I would go with teaspoon size cookies.
Baking time varies. I baked my cookies on a stone and they took about 10 minutes after the first batch. The first batch always takes longer because I never preheat my stone. If you’re using a thin metal cookie sheet, you probably want to start checking them at 8 minutes.
That’s it my friends!
Baking doesn’t get any better than that. Unless of course, you go to the bakery. Then they have cannoli’s and that’s way better.
