French Toast is a great weekend breakfast. Here’s a spin on it for which I take NO credit. I stole this idea from my sister-in-law Kelly. She’s a great cook, but not a low calorie cook. Her favorite ingredients are butter and sugar. Don’t fear, these ingredients are the yummiest.
The original recipe uses Vanilla Creamer instead of 1/2 & 1/2 and vanilla extract. I love the vanilla creamer, but it’s not something I usually have in my refrigerator.
1/2 & 1/2 or whole milk
Bread – your favorite (French bread is best!)
There are NO measurements for this recipe. I know that’s a little scary, especially if you’re in a bad cooking cycle like me, but this is a recipe not even I have ruined.
In a large, shallow bowl (I use a square bowl) whip your eggs, add some 1/2 & 1/2 (whole milk can be substituted or cream will make this luxurious), add a little shot of vanilla (about a teaspoon), and sprinkle generously with cinnamon. Whip together. Soak your bread in mixture. Sliced French bread is wonderful for this recipe, but regular sandwich bread works if that’s all you have handy. Melt butter in skillet and cook away.
You’ll never want to make plain old french toast again.
