My kids and I are in love with Nutella. We spread it on sandwiches, and bagels, and bananas. We top it with strawberries and granola. We eat it right out of the jar.
Well, I do….sometimes, but please don’t tell my kids. It’s my Nutella fix via a heaping teaspoon full.
Recently, I was inspired to make a Nutella Cheesecake filling, and after a little experimenting a new decadent dessert was born – Nutella Cheescake Cookie Cups.
Before we get to our sumptuous, Nutella inspired recipe, you may have noticed that your jar of Nutella, along with many other products in your grocery store, got a bit of a facelift. She looks better than ever, proudly displaying her Facts Up Front label.
Facts Up Front is a voluntary initiative led by the Grocery Manufacturers Association. Many brands, including some store brands, are participating in Facts Up Front. Products with the new Facts Up Front labels help consumers make good, informed decisions about their food.
I love that I can glance at a product and immediately know the calorie count per serving. All the pertinent nutritional information is available right up front. Now we are all educated shoppers who can make the best choices for us, choices that fit our lifestyles and our families’ needs.
When you Visit the Facts Up Front website, be sure to take a nutrition quiz, get more yummy recipes, and use their nutrition calculator.
By answering only five simple questions that include your height, weight, and activity level, the nutrition calculator will tally all your daily nutritional needs. You can tailor your diet to make sure you’re getting all the good calories and vitamins out of your food.
It’s so easy! You can create a personalized nutrition chart for each member of your family.
Nutella Cheesecake Cookie Cups
Have you ever found yourself with a bunch of last minute company coming? Or, maybe your family is like mine. Your kids decide they really want to invite twelve of their closest friends over on Saturday night and they wait until Saturday afternoon to tell you.
I wanted to create a fancy dessert recipe that’s also quick and easy for those spur of the moment parties, so I grabbed my jar of Nutella and gave way to my inner cookie monster. That’s how Nutella Cheesecake Cookie Cups were born.
Ingredients
For the cookie cups you’ll need…
Premade, refrigerated cookie dough
Non-stick Cooking spray
For the Nutella Cheesecake Filling you’ll need…
8 oz. block of cream cheese – softened
3/4 cup powered sugar
6 tablespoons heavy cream
1/2 cup Nutella
For the topping you’ll need…
Whipped cream
Raspberries – fresh or frozen
Baking Instructions
Generously spray a mini-muffin pan with non-stick cooking spray, or line your pan with mini-muffin paper wrappers. Place one serving of prepared refrigerated cookie dough into each cup. Spread the cookie dough out with your fingers to line the shape of the mini-muffin pan. Now, if you have time and want to go all out, by all means make your own cookies from scratch.
Bake pre-made cookie dough according to the directions on the package.
Tip: Bake cookies well. You’re not going for soft and chewy with this recipe. If your cookie is too soft, it will be a nightmare to remove from the pan.
When cookie cups are completely cooled, use the tip of your knife to remove them from your mini-muffin pan. Tread gently. This task is not for the fain of heart.
In the spirit of full-disclosure, I did try to form my cookie around the backside of my muffin tin, as seen on Pinterest; however, it was an absolute #kitchenfail.
To make the Nutella Cheesecake filling, use an electric mixer to beat one 8 oz. block of softened cream cheese with 3/4 cup powered sugar, 6 tablespoons heavy cream, and 1/2 cup Nutella. Whip this mixture until nice and fluffy, as seen in the picture above.
After your cookie cups are completely cooled, use a melon ball scooper to fill the cookie cups. Refrigerate until ready to serve.
Before eating, add a spritz of whipped cream and a raspberry to finish off your masterpiece. Don’t skimp out on the raspberry. According to my fourteen year-old son, there is an “explosion of flavor in each bite.” He think the raspberry really adds to lighting one’s taste buds up like the Fourth of July.
All that’s left is to invite a few friends over and enjoy!
